Situated just off the Tualatin Valley Highway, this unassuming eatery carries the relaxed spirit of a street taco stand that’s found a permanent home, offering a slice of authentic Mexican flavor amidst the Pacific Northwest.
The atmosphere hums with a casual, unpretentious energy — friendly chatter blends with the occasional sizzle from the kitchen, and the bright, self-serve sauce bar adds an interactive touch that makes everyone feel at ease. It’s the kind of place where locals gather for a quick bite without rush, lingering just long enough to enjoy the subtle dance of spice, texture, and freshness that defines their tacos and burritos.
Mister Tacos shines through its thoughtful balance of flavors and satisfying portions that reward both the hungry and the curious. Whether it’s the slow-cooked richness of the cabeza or the sharp tang of chipotle-spiked avocado sauce, each bite reveals layers of care and tradition. Morning visitors are greeted with hearty breakfast burritos hefty enough to share, while lunchtime crowds appreciate the variety of meats and sides that easily stretch into a full, comforting meal without fuss. The quality ingredients are evident — fresh, well-seasoned, and paired with homemade touches that transport you beyond the ordinary.
The vibe is laidback but alive, a place where the people behind the counter know their regulars by name, and newcomers quickly find themselves welcomed into the flow. It’s not just about food here, but about the human moments wrapped up in tortillas — the smiles exchanged, the thoughtful recommendations, the little discoveries in sauce combinations that turn a quick stop into a ritual.

BREAKFAST BURRITO - Ordered the sausage & bacon one. $11.25 each and huge, next time we will have to share just one because neither of us could finish ours. On the board, it says “with hashbrowns“ which I do not like. As it turns out it had chunks of potato instead, which I do like. We liked everything about the breakfast burrito except for the sausage. Next time we will order it with just the bacon, which was not underdone in limp, but fried perfectly crisp as it should be. This is the second time we have ordered here and we remembered right away that the sausage had a nasty taste to it. We finally decided that the only way we can describe the taste is kind of soapy taste. we just picked up the sausage pieces and the rest was very tasty.

First burrito I’ve had in awhile that I was truly impressed and happy with. I got a burrito with extra asada, avocado, and queso for $15. Very fairly priced even with the added ingredients! Plus you can taste the quality of ingredients, ESPECIALLY with their sauces! No corners were cut. Also enjoyed the covered and lit seating area to eat and the paper plate they served the burrito on. 10/10 would recommend.

Update 11/14/2025 For over four years, Mr. Taco has been my go-to food cart in Hillsboro, and for a very good reason. Their reputation for rich, authentic Mexican flavors is well-earned. Every week—or at least every ten days—my family and I find ourselves coming back for the same favorite: the Asada Beef Taco, cooked perfectly on the grill with their beautifully sautéed onions and peppers. As for me, I recently started trying something different, and I’ve become completely hooked on their Beef Head Taco (Hand Beef) prepared in true Mexican style. When I add their grilled onions and jalapeños, it becomes a meal I honestly can’t find anywhere else. The depth of flavor, the authenticity, and the technique they use on the grill make their food stand out from every other cart I’ve tried. Their warm hospitality, respectful service, and consistent quality over the years are what truly set them apart. I’ve tried many places, but Mr. Taco has a signature taste and character that keeps me coming back. Thank you, and I wish you continued success. You deserve it.

It was really yummy food but mine didnt come with any lime. I got 5 tacos. Luckily I have a secret stash for taco emergencies like this. I keep the true lime crystal packets in my car. Lol.. they have a nice little covered eating area that is tarpped to keep the rain manageable. The seating is metal so be careful with what you wear there and time of year. It was freezing buns out when we went and im sure it would feel like going down a metal slide in the summer. The parking is ridiculous but its a taco truck. We only tried the tacos to thats all i can really recommend at this moment. Ultimately, great taco truck. They had amazing Agua fresca horchatta too.
